Here are some tips for Freeze Drying & Rehydrating Scrambled Eggs:

Some people complain about getting "rubbery" scrambled eggs when they rehydrate them. Here's what we do to minimize this from happening.

1. Slightly undercook your scrambled eggs so they are a bit "wet" and spread evenly across your trays. (We like to portion ours so that later we know how many eggs / servings are in each mylar bag)

2. When rehydrating, use filtered or bottled water for best taste vs. tap water.

3. Use Warm, not boiling, water to rehydrate scrambled eggs. Boiling water tends to overcook them and make them rubbery. At home we use an Electric Kettle that has pre-set temps you can choose from. It only takes about 2 minutes to heat the water to 160 F. When traveling, we bring along a Car Kettle that also warms water to whatever temp you need. If we're staying at a hotel or Airbnb we bring along our Joulle. If we're doing something outdoors we bring along our JetBoil. We use a Temp Probe to stop the heating process once it reaches 160F.

We also use Insulated Food Containers to keep our scrambled eggs warm while we wait the 5 minutes for them to rehydrate. We have different shapes and sizes of containers that we use depending on the foods we are rehydrating. For example, when rehydrating soups or stews or meals with different components, like Loaded Mashed Cauliflower and Rotisserie Chicken, we like to use our Round Containers With Two Compartments. They are 32oz with a wide mouth, carry handle, and even have a foldable travel spoon tucked into the lid. When rehydrating Scrambled Eggs, Chili, and various other meals we like to use our Rectangular Containers. They have two stackable layers, a carry handle, and a storage area for utensils.
