Old butchery knowledge, written down before it’s forgotten.

I spent years behind the block as a Lincolnshire butcher. Along the way I was lucky enough to be BBC Young Butcher of the Year in 2009, pick up multiple awards, and even produced Britain’s Best Steak once.

Here you’ll find the secrets of curing, smoking, sausage making, and the quiet details that never made it into books.


I’m no longer behind the block these days, but the craft stays with you. These are the things I was taught, the things that worked, and the things worth passing on.
