Rotting Apples bring back Childhood Memories (Recipe)

When I was a child, Apple Crisp was a common “treat” in our home. I thought, at the time, it was made so often because it was just plain good. In retrospect, I know it was because food was expensive and Mum would make every grocery dollar count, even the apples that went soft too soon in the larder. Mum would make this dish with a multitude of fruits (peach, pear, Saskatoons, etc) that were, as my parents would say, “heading out the door” (meaning going bad)

I haven’t made this in years. Mainly as I only buy one or two apples at a time. However a recent sale had me buy a few extra and I didn’t get them in my belly before they started showing bad spots.

So I thought I would share the recipe with you, should you have some fruit “heading out the door”.

Childhood Apple Crisp

Ingredients:

3/4c all purpose flour (+ 2 tbsp for filling)

1/4 c packed brown sugar (+ 2 tbsp for filling)

1/2 c butter, cold and cut into small pieces

1 c old fashioned oats

Approx 3 lbs of cored, peeled and cubed apple

2tbsp fresh lemon juice

1 tsp cinnamon

The Prep:

Preheat oven to 375. You will need an 8” sq baking pan.

In a mixing bowl add flour, 1/4c brown sugar and cut in cold butter with pastry blender (or as I do with a fork), until mix resembles coarse meal.

Add oats and blend in by hand until it forms clumps.

Place in Fridge as you work on the filling.

Toss apples with remaining flour, brown sugar, cinnamon and lemon juice to coat.

Place into pan (you don’t need to grease it). Top with oat crumbles. You don’t need to press, just try to scatter evenly.

Bake until topping is golden and bubbling, about an hour (as always keep an eye on it towards the end)

Let cool about 20 minutes. Serve with ice cream, whip cream, cheddar cheese or yogurt. Also delicious as is!

Keeps well on the counter up to 4 days. I reheat mine in the microwave.

I have also added a 1/4 c toasted coconut or 1/4 finely chopped walnuts to the topping, from time to time.

Tasting my fresh Apple Crisp, I could close my eyes, and once again we were all around the kitchen table, Dad, Mum, Dennie, Ross, Ellyn and I. All those years ago. I thought those days would last forever.

WAIT! I can hear you asking “that’s it?”. What about Faye??. . .
