A study published in The Journal of Immunology by researchers at the Medical College of Georgia (Augusta University) showed that drinking a modest dose of sodium bicarbonate (baking soda) triggered an anti-inflammatory shift.

The mechanism: bicarbonate ingestion signals special mesothelial cells lining the spleen to dial down immune activation — causing white blood cells (notably macrophages) to move from a pro-inflammatory “attack mode” to a calmer, anti-inflammatory state, and increasing regulatory T-cells that help suppress runaway immune reactions.

The authors propose this could provide a cheap, over-the-counter way to reduce destructive inflammation seen in autoimmune diseases (like Rheumatoid arthritis), though they note that real-life clinical trials are still needed.
