COFFEE AT THE COOPERS
Ingredients:
50ml Black Bush
50ml Black Bush Blend Coffee – cooled
30ml Plum & Five Spice Syrup (see below for separate recipe)
Method:
Add all ingredients to cocktail shaker or clean sterilised jar.
Add ice.
Shake hard for 8-10 seconds.
Strain ingredients through fine strainer or sieve.
Pour into an ice filled Bushmills rocks glass.
Garnish with star anise.
Plum & Five Spice Syrup
Ingredients:
8 Plums
800g Caster Sugar
1 tsp Chinese Five Spice Powder
Method:
Quarter and pit the plums and set aside.
To a pan add 500g of water and bring to the boil.
Once boiling, add 800g of caster sugar and the quartered plums.
Bring to a simmer for 10 minutes, stirring to ensure the sugar is dissolved.
Remove from the heat and add 1 tsp of Chinese five spice powder.
Use a blender or whisk to incorporate the spice into the syrup.
Allow to rest for 20 minutes.
Strain through a sieve and allow to cool.
