It’s been nearly 3 years since I decided to start “Flavour Fred”. It certainly gets confusing when people realise my name is George.

I see “Flavour Fred” as an alter ego I can call on when I wish, immersing myself in the topic of flavour has led to many new opportunities working alongside many great people and projects.

I love finding wild flavours as much as finding out about various cuisines and how those cultures go about deriving flavour. Getting the most out of an ingredient gathering/collecting at their best known a Japanese concept known as “Shun”. It is something we all want to achieve being seasonal, fresh, local, food at the peak of its perfection.

With this focus many ingredients have become choice for me with combinations that means I’m enjoying preserving & fermenting as much as possible. These techniques across the world and the history behind flavour is such an incredibly wonderful topic to lose myself within.
