This sourdough blueberry cobbler is a delightful combination of sweet, juicy blueberries and a buttery, crumbly topping made with sourdough discard.

  • 4 cups fresh or frozen blueberries

  • 1/2 cup sugar

  • 2 tablespoons cornstarch

  • 1 tablespoon lemon juice

  • 1/2 teaspoon vanilla extract

  • Preheat your oven to 375°F (190°C). Grease a 9-inch square baking dish.

  • In a large bowl, toss together the blueberries, sugar, cornstarch, lemon juice, and vanilla extract until well combined. Pour the blueberry mixture into the prepared baking dish and spread it out into an even layer.

  • In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  • Add the sourdough starter to the flour mixture and stir until a soft dough forms.
