These sourdough apple butter muffins are moist, tender, and packed with apple flavor. Perfect for breakfast or a snack!

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.

  • In a large bowl, cream together the butter and sugar until light and fluffy.

  • Beat in the sourdough starter, eggs, vanilla extract, and apple butter until well combined.

  • In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Fold in the chopped pecans, if using.

  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
