simple veggie fried rice

WHAT YOU'LL NEED:

1 cup uncooked Indian basmati rice

2 carrots

1/2 red onion

4 cloves garlic

2 eggs

2 Tbsp chopped cilantro

3 Tbsp avocado oil

2 Tbsp soy sauce

1 tsp smoked paprika

1/4 tsp cayenne

HOW TO MAKE IT:

1 // get rice cooking according to packaging. then chop red onion + carrots.

2 // in a heated pan w avocado oil, add 4 cloves crushed garlic (or less if you're not that into garlic), red onion + carrot till you get good color on the veggies + carrots still have some crunch, about 15 minutes. season w salt, pepper, smoked paprika + cayenne

3 // when the veggies are done, add rice + combine together in a pan. season w a splash of soy sauce to taste

4 // top with an egg + chopped cilantro

TIP:

you can make the whole veggie fried rice base ahead of time (like the night before) + then all you have to do in the morning is warm it up + top w an egg!
