I recently purchased a pancake maker, the best $29 AU I have spend in a long time. I wasn't looking for this and I never knew I needed it, but how wrong I was. Following this unexpected purchase, for a brief time we were making pancakes at every opportunity we could, this has settled down, well just a tad. Now it's only once or maybe twice a week ...don't judge!
For those looking for a simple mix, here's what I do...
1.5 cups of flour
2 Tablespoons sugar (I use Stevia)
1 teaspoon baking powder
1 egg
1 cup of milk
1 teaspoon of Vanilla Essence
70g butter
Combine the dry ingredients in a mixing bowl (flour, sugar and baking powder).
Melt the butter and allow to cool off a little, before adding to the wet ingredients.
In another container add the milk, egg, vanilla essence and the melted butter once cooled.
Add the wet ingredients to the dry ingredients and mix with a electric hand mixer (or by hand)
Let the mix sit for a few minutes, while the pancake maker heats up.
Then it's into the pancake maker for about 3mins each pair of pancakes.
Extra tip: As I travel round Australia, living out of a mobile home I generally bag up the dry ingredients into zip lock bags (about 12 mixtures at a time) for a quick start to my pancake addiction. Then it's just a case of melting butter; measuring out the milk; adding an egg and essence.
For blueberry pancakes, add a few frozen blueberries into the mix when cooking.
I like mine with mango, sometime banana and bacon, always with maple syrup, check out Aldi's maple as the sugar content is 9.8mg vs others that seem to be 20mg + quite the difference!
