Recipe: Almond Oat Slices & a Few Images from Todays Walk

Well.

It’s been a long spell since I’ve tried a new baking recipe that exceeded my expectations. Yesterday I had a “hankering” for something sweet, and decided to try making these slices. When I tried one, it reminded me of a soft chewy •Hobnob• (Scottish Cookie), which happen to be my favourite store bought treat.

They are so good (and easy to make), I thought I would share with you to try, should you have a hankering as well.

To Make:

Preheat oven to 350 F. Grease and line a 8” sq pan with parchment paper. Leave paper up high enough to make it easy to remove the baked good after it’s cooled, in order to cut.

Take 1/2 C soft butter and mix well with 1/4 c EACH Brown Sugar and White Sugar.

Add 1 Egg and 1 tsp Vanilla. Mix well.

Add 2/3 C All Purpose Flour, and 1/2 C Rolled Oats. Once again, mix very well.

Spread evenly into prepared pan.

Bake in preheated oven for 25 minutes or until golden.

While baking, chop your almonds finely.

Side Note: I think this would be excellent with toasted coconut as an alternative to the Almonds.

When almonds are chopped, start melting your 1c of chocolate chips in a double boiler. Melt slowly to prevent seizing of the chocolate from any steam or boiling water spatter.

I don’t own a double boiler , in fact only own 2 pots. I place the smaller pot in the larger one, with a canning jar lid positioned under the small pot to keep it off the bottom of the larger one.

When you bring the baked goods out of the oven, pour the melted chocolate over the bar. Spread evenly, and then sprinkle with almonds. Place somewhere cool and leave until the chocolate is almost set.

Pull the square out using the parchment paper as handles. Gently cut into squares. Either put back in your pan or you can individually wrap and put in the freezer (which is what I did once the chocolate was totally set). Freezes well.

I had my slice with my favorite cup of tea, Mint and Ginger.

This morning Faye and I went for a 4.5 Mile walkabout. It was cold, damp and grey. We still managed to have fun and enjoy the moments.
