since the new Ableton 12.3 beta has been released, the brand new killer feature called "Stem Separation" has a hidden extra that will be made available after redownloading the Ableton Secret Tips and Tricks zip from my shop for free, take the options.txt file from the zip and simply replace it with the prvious one - follow the instruction in the readme if you dont know or dont remember how. After doing so restart your ableton 12.3 beta for the Toggle feature to appear when selecting "Stem Separation" it will give you the toggle between "Quality" and "Speed" mode.
