What Is the Bloom?

The bloom is the initial stage of brewing when hot water first contacts ground coffee.
It causes carbon dioxide (CO₂) trapped in the beans during roasting to rapidly escape.
This process releases gas and allows the coffee bed to become evenly saturated for proper extraction.

The bloom visually appears as a swelling or bubbling of the coffee bed a result of CO₂ expansion and the release of volatile aromatic compounds.

Why the Bloom Matters

  1. Gas release:

    • Freshly roasted coffee contains high amounts of trapped CO₂.

    • If gas isn’t released early, it will repel water during extraction, leading to uneven wetting and channeling.

  2. Extraction control:

    • A proper bloom improves contact uniformity between water and coffee particles.

    • This ensures consistent extraction across the entire bed.

    • Tip: Is to pour slowly and follow the bubble, this will penetrate where gas is leaving and actually help even out the bed of ground coffee. But, wherever is possible avoid using fresh coffee if you can help it.

  3. Flavour clarity:

    • Inadequate blooming can result in under-extracted (sour, thin) or inconsistent cups.

    • Proper blooming enhances sweetness, clarity, and balance by stabilising extraction conditions.


Optimal Bloom Time & Bloom Water Volume

There is no right or wrong, all bloom time it depends on bean age, roast, and grind.
General guidance: 30 - 45 seconds.

A common approach is 2x to 3x the coffee dose in grams.

For example:
If using 15g coffee, start with 30–45g water for bloom.

Too little water = incomplete saturation
Too much water = temperature loss and over-dilution early on

Bloom Water Temperature

  • Ideal range: 90°C–96°C

  • Hotter water accelerates CO₂ release and can increase turbulence.

  • Cooler water slows degassing and may require longer bloom.
