Pecorino Romano - A "Grate"ful Cheese - Weekly Cheesings

Hello everyone! It's been been a minute but HELLO! πŸ‘‹πŸΌ I am back with one of my favorite cheeses! Many folks when they think of a grating cheese to put on pasta, they go for Parmigiano-Reggiano but for me? It's the darling Pecorino! The name always makes me laugh because it just means "sheep's cheese of Rome"! πŸ‘ Most romano you see in stores is made from cow's milk and isn't considered ACTUAL pecorino romano. A sheep's milk romano is... so much deeper in flavor and has a wonderful sharpness to it! If you are a fan of sharp cheddars this is one for you!

It was used a lot in Rome as a food for soldiers! It last so long and was easy to store so it was very easy to bring along and was very filling and full of protein. πŸ’ͺ🏼 Sheep's milk also has a lot of fat so it just has a lot of good stuff for a travelling soldiers. It is one of the older cheeses that are know worldwide! It's by far one of my favorite dinner cheese but I also just... like to eat it.
