The dearest of soft friends, Humboldt Fog! This one has a fantastic story! The cheese itself is made over in California in Humboldt County. The cheese is supposed to resemble the fog rolling off the bay and features a neat line of veggie ash inside of it. This one is a goat cheese that has basically been treated like a brie. It uses a similar technique to soft ripen the cheese as it ages. It does a wonderful job of mellowing out the goat-y tang and makes it smooth with just a hint of that classic tang.
Cypress Grove is interesting in that the creamery and the dairy are just up the road from each other. Last I knew they were an all goat farm as well! They started off with just a few goats and eventually grew to a whole cheese making company! I used to sell these in 1lb wheels and it was always fun because folks would just walk up and grab a whole wheel! They fit in your hand! I personally hope one day to be able to see the farm myself. 🐐
The cheese itself goes amazing with so many different things! It loves fruits and sweet wines. It also crumbles really well so it can be fun on a salad too instead of feta! It also does lovely in sandwiches as well! The Cypress Grove website has quite a few recipes to try! If you happen to see one of their cheeses in a store and you feel like trying something new, I highly recommend it!
