Now this cheese is one I hold near and dear to my heart. Collier's is probably one of my all time favorite cheeses. It is sharp, sweet, delicious, and goes well with a bit of pepper jelly! 🌶 (My way to eat it!) Collier's boasts itself on being powerful and it absolutely does that. This cheddar packs a wallop in flavor and sharpness that is unique to this cheese. This cheddar is aged for about 20 months before being packed up and shipped out from Wales. They tout using 100% Welsh milk for their cheeses as well which means a lot to cheese. Knowing that it's all coming from the same herbs brings consistency with cheese as it can completely change how the cheese turns out if its not quite right!
The creamery itself isn't a very old one like some others I've spoken about! This one started in around 2004 and they wanted to make a cheese to represent the industrious and hardworking folks of Wales. Collier itself is a term that means coal miner! The founder of Collier's is the grandkid of a coal worker and he drew a lot of inspiration from that and that's why there is a coal miner on the packaging! ⛏ Cheese was a common staple as cheeses tend to hold up well in all sorts of conditions and is an incredibly good snack from proteins and such!
This cheese is actually fairly easy to find so if you are ever looking for a good cheddar experience, look no further!
