This Slow-Cooked Southwest Chicken is a flavorful and hearty dish perfect for a busy weeknight or a lazy weekend. ingredients

  • 6 boneless, skinless chicken breasts

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 1 can (15 oz) diced tomatoes with green chilies

  • 1 cup salsa

  • 1 bell pepper, diced

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • Salt and pepper to taste

  • 1/4 cup fresh cilantro, chopped

instructions

  1. Place the chicken breasts in the bottom of the slow cooker.

  2. Add black beans, corn, diced tomatoes, salsa, bell pepper, onion, and garlic on top of the chicken.

  3. Sprinkle chili powder, cumin, paprika, salt, and pepper over the mixture.

  4. Cover and cook on low for 4-6 hours, or until the chicken is cooked through and tender.

  5. Shred the chicken with two forks, mix everything together, and let it cook for an additional 15 minutes.

  6. Stir in fresh cilantro before serving.
