ingredients

  • 4 bone-in, skin-on chicken thighs

  • 4 medium potatoes, cubed

  • 1 lemon, sliced

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

  • 1/2 cup crumbled feta cheese

  • Fresh parsley, chopped (for garnish)

instructions

  • Preheat your oven to 400°F (200°C).

  • In a large bowl, combine chicken thighs, cubed potatoes, lemon slices, minced garlic, olive oil, dried oregano, salt, and pepper. Toss until everything is well coated.

  • Transfer the chicken and potato mixture to a baking dish, arranging the chicken thighs skin side up.

  • Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.

  • Sprinkle crumbled feta cheese over the chicken and potatoes during the last 5 minutes of baking.

  • Garnish with fresh parsley before serving.
