ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 cup marinara sauce
1 cup shredded mozzarella cheese
2 cups cooked polenta
2 tomatoes, sliced
Fresh basil leaves, for garnish
instructions
Preheat your oven to 375°F (190°C).
Season chicken breasts with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken breasts and cook for 3-4 minutes on each side, until browned.
Remove chicken breasts from the skillet and set aside.
Spread marinara sauce over the bottom of the skillet. Return chicken breasts to the skillet, on top of the marinara sauce.
Top each chicken breast with shredded mozzarella cheese.
Arrange sliced tomatoes over the top of the cheese.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Serve hot, over cooked polenta, garnished with fresh basil leaves.
