Caprese Chicken & Polenta Bake is a delicious and comforting gluten-free dish that's perfect for a cozy dinner at home. Tender chicken breasts are topped with melted mozzarella cheese and served over creamy polenta with fresh tomatoes and basil.

ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 1 cup marinara sauce

  • 1 cup shredded mozzarella cheese

  • 2 cups cooked polenta

  • 2 tomatoes, sliced

  • Fresh basil leaves, for garnish

instructions

  • Preheat your oven to 375°F (190°C).

  • Season chicken breasts with salt and pepper.

  • Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken breasts and cook for 3-4 minutes on each side, until browned.

  • Remove chicken breasts from the skillet and set aside.

  • Spread marinara sauce over the bottom of the skillet. Return chicken breasts to the skillet, on top of the marinara sauce.

  • Top each chicken breast with shredded mozzarella cheese.

  • Arrange sliced tomatoes over the top of the cheese.

  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

  • Serve hot, over cooked polenta, garnished with fresh basil leaves.
