We are on a lower-sugar lower-carb path and used the Keto No-bake Chocolate Cheesecake recipe from All Day I Dream About Food to make the treats pictured. I made one batch with choc zero dark chocolate chips and another batch with Lilly's white chocolate chips.
FD Tip: If you want them to be easier to bite into then add some filtered water (not tap, for best taste) to thin out the mixture. This holds true whether it's the no-bake filling you're using or you get a pre-made cheesecake. Thinning out the mixture also makes it easier to spoon / pour into food molds to create fun shapes.
I added the layer of chocolate first, and then put the food molds into the freezer for about 10 minutes. Next I added the white chocolate layer and put them back in the freezer overnight.
Depending on the food molds you're using, sometimes it's easier to use squeeze bottles to get into all the little nooks and crannies. We bought this set of Condiment Squeeze Bottles just for filling food molds - it has a narrow tip for the thinner mixtures and a wider tip for the thicker mixtures. Using these tips makes it so much easier to reach in all the corners and distribute the mixtures into all of the various shapes!
We have a dedicated shelf in our downstairs freezer just for pre-freezing our food molds and trays of food items. Once frozen we can add tray covers and move to a different part of the freezer to keep our sets of trays in an efficient rotation for the freeze dryer.
The next day I popped the pieces out of the molds, and placed them on the FD tray with a silicone mat to prevent sticking.
You can fit quite a few pieces on each tray. Just make sure they aren't too tight or they may stick together. You can even add a second layer using parchment paper as long as you're still within the capacity limits of your model. You don't want to overload your trays.
Using silicone mats or Pre-Cut Sheets Of Parchment Paper is important since they allow the pieces to lift off easily without breaking. No one wants to put in the time and effort to make fun shapes just to have them break when removing them from the tray. I'm so pleased with the way these turned out!
We like to grab food molds from various stores like JoAnn's, Michaels, Hobby Lobby, Walmart, etc. We also have found some Really Fun Food Molds Online. Once a holiday has passed, many of them go on sale. It's a great way to stock up on food molds that you can use again and again for years to come!
Photo Below shows tray #4 in the freeze dryer with the Cheesecake Bites. It's fascinating to watch how food items change during the process - you can see how the colors became lighter as the moisture was removed.

Here are photos of this particular tray Before & After Freeze Drying. You can see how the colors get lighter once the moisture has been removed. This also concentrates flavors which results in absolutely delicious cheesecake treats! FD desserts like this are also more lightweight which makes them easy to take along on backpacking trips and perfect for air travel.
Other Ideas: I have also taken no-bake Philadelphia Cheesecake Filling and mixed it with freeze dried powdered strawberries, blueberries and cranberries blended with water and then mixed in with the cheesecake filling, and I've even used raspberry & apricot pastry filling mixed with cheesecake filling to make cheesecake bites. You can take an already-baked cheesecake and blend it into a mixture with chocolate pudding or add cocoa powder. You can also buy chocolate cheesecake mixes or a chocolate cheesecake that's already made from the store.
We typically rotate our trays after the Drying Stage completes, once the machine is in Extra Dry Time. Most batches take at least 30-something hours to be Storage-Ready-Dry so we do our Dry Checks in 4-6 hour intervals until all the trays stop dropping in weight. (Fruits with seeds or soups with lots of moisture will take much longer)
Recording Total Times and Weights during Dry Checks for various batches of food shows us patterns that are helpful for reference down the road. This historical info will help us to determine when to begin certain batches of specific food items so that they end at a time of day when we are able to package things more easily. We can also record the Storage Location of our Mylar Bags or Jars of FD food items so that we can find things quickly later.

Once this batch was determined to be Storage-Ready-Dry, we stored the Cheesecake Bites in vacuum sealed jars with OAs.
We like to use Stainless Steel Food Tweezers to pack jars and bags since they allow you to place the pieces exactly where you want them and minimizes handling. Sometimes it's hard to fit your hand down into the larger, deeper jars and the pieces don't always fall in like you need them to so that they all fit properly. Once we started using food tweezers our storage process got so much more efficient!
We also have Electric Mason Jar Sealer Kits (for Wide-mouth and Regular-mouth jars) that we like to use. Having one upstairs and downstairs makes things easier as we're opening and then resealing various jars in our pantry and FD area throughout the week. Also, if one breaks we still have a spare to use until the replacement arrives. If you have hand or wrist pain, and don't like having to twist the adapter piece on and off, then consider using this Dual-Head Auto-Stop Mason Sealer instead - it has dedicated ends for both regular and wide mouth lids and doesn't require an adapter piece.
