QUEEN CAKES RECIPE

Makes 24 Queen Cakes
Ingredients
4 cups self-raising flour
250g butter
1 cup white sugar
4 eggs
1 tablespoon vanilla essence
2 cups fresh milk
Method
In a large bowl, whisk the butter and sugar together until light and creamy.
Add the vanilla essence, eggs and milk, then whisk until well combined and fluffy.
Sift in the self-raising flour and gently mix until you have a smooth batter. Avoid overmixing.
Grease a muffin pan and spoon the batter evenly into the cups.
Bake in a preheated oven at 180°C for 20–25 minutes, or until golden brown and a skewer inserted in the centre comes out clean.
Allow the Queen Cakes to cool slightly before removing them from the pan.
