WHAT YOU’LL NEED:
3 oz frozen yellowtail (thawed overnight in fridge)
2/3 cup sushi rice (uncooked)
1 cup cubed pineapple
2 Tbsp jalapeño slices
1 sprig green onion
1/2 avocado
4 Tbsp yuzu ponzu
1 Tbsp rice vinegar
2 Tbsp furikake
1/2 Tbsp butter
HOW TO MAKE IT:
1 // cook rice according to package. once cooked, add butter, rice vinegar, splash of yuzu ponzu + spoon of furikake. stir to combine
2 // cut pineapple into cubes, jalapeño into slices, green onion into thin strips, avocado into slices + yellowtail into somewhat thin strips. put yellowtail in a small bowl + combine w a splash of yuzu ponzu
3 // assemble bowl w sushi rice as the base, then strips of yellowtail, followed by the toppings + additional sprinkle of furikake + small pinch of sea salt
TIPS:
use fruit like pineapple, mango, or clementines to sweeten up your bowl + balance out the heat from jalapeños or other spicy toppings
