veggie wraps w hummus, quinoa, veggies, fresh basil + fig balsamic vinegar

WHAT YOU'LL NEED:

2 veggie wraps

1/4 cup cooked organic Super Grains

2 heaping tbsp organic hummus

1 roma tomato

½ red bell pepper

few leaves of mixed greens

fresh basil

2 tsp fig balsamic

 

HOW TO MAKE IT:

1 // cook Super Grains as directed on packaging (allow time for grains to cool before adding to wrap)

2 // while grains are cooking, prep veggies. slice tomato + red pepper (I like them sliced thinly). cut 3-4 big basil leaves per wrap into ribbons.

3 // to make wrap, begin by spreading humus on both tortillas using back of a spoon–being careful not to go all the way to the edges. spoon quinoa onto the middle + top with slices of red pepper + tomato. season w/ salt + pepper, then drizzle fig balsamic + top w/ basil ribbons + greens.

4 // to wrap, fold sides in + bring the bottom side up and over the top, using your fingers to tuck in the burrito before finishing rolling

 

TIP:

pre-make a bunch these, wrap tightly in plastic + store in the fridge so they’re ready when you are (or take them as trail snacks like I do on hikes!)
