WHAT YOU'LL NEED:
salsa
-1 container Whole Foods pre-made mango pineapple salsa
-1 roma tomato, chopped
-1 cup strawberries, chopped
-1/4 red onion, chopped
-1/4 cup fresh cilantro, chopped
-bag of Siete Foods chips
ceviche
-1/2lb. small wild-caught shrimp
-1/2lb. bay scallops
-1/2lb. crab meat
-1/2 lemon
-1/2 lime
-1/2 orange
HOW TO MAKE IT:
1 // steam cook the shrimp + crab meat. pan sear the bay scallops. let cool completely, then add juice of lemon, lime + orange. stir + put back in fridge
2 // chop + combine ingredients for the salsa
3 // to plate, pour salsa onto a large sharing plate + create a well in the middle. spoon the ceviche in the well + serve with tortilla chips + remaining citrus on the side
TIP:
To make this an easier thing to put together (like it’s not simple enough already), I opted in using the premade Whole Foods mango pineapple salsa to save me the time of cutting up a whole pineapple and mango. I figured you may not want to do that either, so I’m passing along my shortcut + story to helps you build better meals.
