WHAT YOU'LL NEED:
1 cup cooked wild rice
2 golden beets
1/2 bag brussel sprouts
2 sprigs green onion
2 Tbsp chopped cilantro
1/2 lime
2 tsp garlic powder
HOW TO MAKE IT:
1 // get rice cooking according to package
2 // peel beets, cut into 1/2 inch thick slices, toss in a bowl w avocado oil, salt + pepper. roast in oven for 15 minutes at 400 degrees (not done yet, will be adding sprouts then back in the oven)
3 // meanwhile, chop off ends of brussel sprouts + cut in half. toss in a bowl w avocado oil, salt, pepper, + garlic powder. toss sprouts in after 15 minutes w beets for another 12 or so minutes until spouts are tender + crispy. beets should be tender, too
4 // to plate, add wild rice as your base + add roasted veggies. top w green onion, cilantro + squeeze of lime
TIP:
wild rice takes a while to cook. always get it started first + make extra when you do!
