WHAT YOU'LL NEED:
2 cups Gotham Greens/mixed greens, roughly chopped
1 nectarine, diced
⅓ english cucumber, sliced + halved
-¼ cup local microgreens
-2 tbsp pumpkin seeds
-¼ lemon squeeze
-2 tbsp local raw honey drizzle
-1 tbsp olive oil drizzle
HOW TO MAKE IT:
1 // rather than combining all ingredients in a salad bowl, we are going to lay each delicate ingredient down one at a time, going down the line of the ingredient list... grab two serving plates + start by spreading the roughly chopped greens across each plate. next, scatter cubes of nectarine over the greens, followed by sliced cucumber. sprinkle the microgreens + pumpkin seeds over the top before squeezing the lemon + drizzling the honey + olive oil over the plate evenly. finish with salt + pepper to taste
TIP:
keep your salad dressings simple! basic combinations like lemon/honey/olive oil as you see in this recipe (or olive oil + red wine vinegar, another good one) is a change worth making in the kitchen. just about every bottled dressing is loaded with saturated fat, sodium + refined sugar, but you won’t find that in a simple lemon/honey/olive oil dressing
