bacon, egg + mushroom avocado toast

WHAT YOU’LL NEED:

1 avocado

1/2 cup sliced mushrooms

1 strip organic sugar-free bacon, chopped

2 slices of fresh baked sourdough

1/2 tsp garlic powder

pinch of cayenne

pinch of red pepper flakes

1 tsp avocado oil

HOW TO MAKE IT:

1 // mash avocado + season w garlic powder, cayenne, salt + pepper

2 // heat a nonstick pan to medium heat + add chopped bacon pieces. after a minute or two when some fat starts to render, add a touch of avocado oil + sliced mushrooms, toss + stir every couple minutes until bacon + mushrooms are crispy but not burnt

3 // while bacon + mushrooms are finishing up, toast sourdough bread + spread avocado mash on toast

4 // remove bacon + mushrooms from heat, add to the toast. sprinkle on red pepper flakes

5 // drain excess bacon fat from pan + return to low heat this time. cook eggs sunny side up or over easy for a runny yolk. top with salt + pepper

TIPS:

don’t over stir the mushrooms! they crisp more when you leave them to cook on one side for a while
