Grilled chicken burger

The pineapple, beetroot and tomato, as well as adding a great flavour combination, refresh the palette because of their high water content. This gives this burger a very summery feel. Most of the sodium in this recipe comes from the bun, so if possible use a wholemeal or multigrain bun. This recipe is low fat, low sugar, high protein.

Ingredients


  • 1 chicken breast

  • 1 large tomato, sliced

  • 2 pineapple rings

  • Beetroot, 8 small or 2 large slices

  • 1 tbsp. mayonnaise

  • 1 cup lettuce

  • 2 bread rolls

  • Cooking Spray

On a griddle pan or BBQ, heat on high heat. Flatten chicken so even, and spray the chicken breast with oil on both sides and cook on med heat, around 10 mins.

Whilst chicken is cooking, cut roll in half and toast the inner of each roll under the grill.

When chicken is cooked, take off heat, slice in half, on an angle.

Layer each roll with lettuce, tomato, beetroot, chicken, mayo and pineapple.

Serve with Healthy Potatoes.
